The beans come from the hills of the Sidama region in southern Ethiopia, specifically from the village of Bombe, where coffee is crafted rather than just produced. The harvest comes from up to 1,500 small farmers who grow coffee at high altitudes, , which ensures the high quality and rich flavor profile of the coffee cherries. The coffee cherries are sent for processing to a washing station run by producer Daye Bensa. The station of the same name is one of the most important centers for processing specialty coffee in Ethiopia, and Daye Bensa himself has placed several times in the prestigious Cup of Excellence competition, including 2nd place in 2022.
The coffee owes its lightness and fruitiness to the washed processing method. After harvesting, the cherries are first carefully sorted, hulled and then placed in water tanks, where they ferment for 36 to 72 hours. They are then dried for 12 to 15 days on raised African beds, where they are regularly turned and protected from excessive sunlight with cloth covers. This method gives the coffee a light body with elegant fruity notes and pleasant acidity.
