Ethiopia Circus from the Czech roaster Kolna Roastery is a vibrant and juicy coffee that bursts with sweet tropical fruit aromas from the very first sniff. The flavor features Skittles, lychee, melon, and papaya, complemented by a delicate floral aroma and pleasantly juicy acidity. The aftertaste has a slight hint of black tea with lemon, which adds balance and elegance to the overall flavor. This coffee will delight anyone who likes playful, fruity, and distinctly sweet filter coffees.
The coffee comes from the Negele Gorbitu cooperative in the heart of the legendary Yirgacheffe region, in the Gedeo zone in southern Ethiopia. Founded in 1975, this cooperative brings together over 1, 100 small farmers who farm on small garden farms, often less than one hectare in size. They grow the native Ethiopian varieties Kurume, Dega, and Wolisho, without the use of chemicals and with the utmost respect for the local ecosystem. The Yirgacheffe region is considered the cradle of delicate, complex, and floral flavors, and Circus is a perfect example of this.
This particular lot was processed using the natural anaerobic method, in which ripe cherries ferment for four days without oxygen in stainless steel containers. The coffee is then dried for 15-18 days on raised African beds, which gives it its typical sweetness, depth, and delicately syrupy body. This processing method results in a distinctive, playful coffee that surprises with its complexity and vibrant character in the cup.
