The Prague roastery Mazelab presents Ethiopia BELEKE YUYUTIE, which is perfect for anyone who enjoys the typical fruity flavor that Ethiopian coffees are known for. These beans are processed using a traditional natural method that enhances the fruitiness hidden in the beans, allowing you to enjoy a hint of tropical fruit in every sip. The specific flavor profile of this coffee consists of yellow tropical fruit, panela, and cane sugar. Those who like distinctly sweet flavors in their coffee will especially enjoy this coffee.

The beans were grown on the family farm of farmer Beleke Yuyutie, who represents several generations of coffee growers in his family. Bekele's farm is called Denbi and covers just 3.9 hectares. The farm is located at an impressive altitude of 2,350 meters above sea level. This exceptionally high altitude, combined with the region's cool climate, creates ideal conditions for the slow ripening of coffee cherries, resulting in surprisingly small, denser beans with a sweeter and more complex flavor. The coffee is grown here in intercrops with native forest plants, in the shade of Birbira, Wanza, and Acacia trees. Like many small Ethiopian farmers, Bekele practices organic farming and relies mainly on manual labor performed by himself and his family. Bekele obtained an export license in 2021 and previously sold cherries to local suppliers.

The coffee was processed using the dry method. Dry processing of coffee, often referred to as natural, is the oldest and simplest method of processing. Freshly harvested coffee cherries are first sorted and then spread whole, without removing the pulp, on drying areas or African beds. They are dried in the sun for several weeks and turned regularly so that they dry evenly and do not start to mold. During drying, the sugars and flavors from the pulp are gradually absorbed into the bean. Once the correct moisture content is reached, the dried husk is mechanically removed. The result is a coffee with a fuller body, higher sweetness, and a distinctly fruity flavor profile.
