Ethiopia Ana Sora is like a sunny day in a cup. The aroma of citrus will draw you in before you even taste it – and the first sip will reward you with the juicy flavor of stone fruit, lemon zest, and delicate bergamot. This is a coffee that will brighten your day. Light but distinctive, sweet and sparkling. Fun yet elegant. The perfect companion for joyful mornings and afternoon moments. Its distinctive aromatic profile with notes of light citrus fruit is beautifully complemented by a clean and structured acidity.
Elto Coffee has only been operating the Ana Sora station since 2024, but it has a strong name behind it. Atiklit Dejene and Eliyas Dukamo have experience from the highest echelons of Ethiopian coffee – from projects such as Gesha Village and Daye Bensa, where Atiklit worked as a processing manager and Eliyas as an operations director. At Elto, they focus on detailed work, an individual approach to clients, and precise micro-lots. The Ana Sora station is located near the town of Adola, in the heart of the renowned Guji region, where traditional heirloom varieties are grown. The exceptional conditions and level of processing create an exceptionally clean and distinctive cup.
The harvest took place in late November and early December 2024 – the early and abundant harvest allowed us to test new fermentation protocols and fine-tune the drying process. This particular lot was processed using the dry method and dried on African beds with the utmost care. During Elto's visit to Addis Ababa, this lot from Ana Sora proved to be one of the cleanest and most distinctive. The result is a coffee with a clearly defined flavor profile – sweet, fruity, with a hint of citrus and stony fruitiness. It fully corresponds to Elto's vision: a new level of quality from Ethiopia.
