FINCA EL PEZOTE - Cup of Excellence No.12 is a coffee from the Andraschko roastery, which specialises in exclusive micro-lottery with a precise profile. In the cup, it offers a delicate combination of jasmine, caramel and exotic fruits - a taste experience that is elegant, layered and with a pleasantly lively acidity. The coffee is roasted to a medium grade, ideal for pour-over methods where its floral and sweet notes stand out. Known for its large beans and rich flavor potential, the Pacamara variety earned this lot 12th place in the Cup of Excellence 2024 competition.
The Finca El Pezote farm is located in the La Palma area of the Chalatenango region, at an altitude of around 1 900 metres. It takes its name from the animal called 'pezote' or 'mishasho', which used to live here and is now protected by nature. The local microclimate, with its cool, foggy weather, slows down the ripening of the coffee cherries, which contributes to a richer and more complex flavour. Harvesting here takes place in three separate phases to ensure that only perfectly ripe coffee cherries are harvested - deep red and full of sweetness. The farm is run by Hugo Pineda, who ventured into the world of fine coffee without previous generations of coffee farmers behind him. Everything he knows he has gained from practice, experimentation and shared experiences of other producers - and the results speak for themselves.
The processing method for this coffee combines a washed process with anaerobic fermentation, a technique that requires great precision but produces extremely interesting results. First, the carefully hand-picked cherries are fermented without oxygen, which allows the production of specific aromatic compounds not normally found in coffee. The coffee is then washed and gently dried to preserve the purity and clarity of the flavour profile. It is this combination of methods that brings out the floral and fruity notes of the Pacamara variety, ensuring a cup that is both distinctive and elegant. This coffee is not just another item on the menu - it is a tribute to exceptional terroir, innovation and commitment.
