The Los Pirineos farm, managed by the Baraona family since 1890, sits atop the Tecapa volcano in the Usulután region. Here, tradition meets innovation – the farm is currently run by Diego Baraona, who continues the legacy of his father, Gilberto. Diego focuses on cultivating rare varieties and precision throughout the entire process – from selecting the beans to final processing. His approach to coffee is deeply personal and forward-thinking, with a strong emphasis on sustainability, transparency, and top-notch quality. Gringo has worked with Diego for years and even had the honor of welcoming him to Gothenburg, Sweden, in 2022.
This Geisha was processed using the washed method, which highlights its bright, floral, and fruity flavor profile. The coffee cherries were carefully handpicked and fermented under controlled conditions to remove the mucilage. They were then washed with mountain spring water and dried on raised African beds, where they stabilized over several days to the ideal moisture level. The result is a cup with exceptional clarity, full of delicate yet intense aromas that showcase why Geisha is considered one of the most prized varieties in the world.
