The coffee comes from the West Valley region of Costa Rica, specifically from the Herbazú micro-mill, which belongs to iconic producer Toño Barrantes. His farm is known for its rigorous separation of varieties and careful approach to fermentation and drying. The San Roque variety grown on this farm is less common but all the more interesting – it offers unique flavor layers and behaves beautifully when naturally processed. Thanks to the altitude, high-quality soil, and stable climate, the beans retain their distinctive sweetness and fruitiness.
The beans were processed using the El Maestro natural method, which is Herbazú's own process. After hand-picking and careful sorting of the cherries, controlled fermentation and slow drying take place, with constant turning on African beds. This process emphasizes the intense fruitiness and fullness of flavor, with no signs of overripeness or impurities. The result is a coffee that is wild yet smooth—juicy, sweet, dense, and utterly unmistakable.
