La Cabra is bringing back a popular Colombian classic to its repertoire – the MUSTAFÁ lot, which stands out for its sweetness, complexity, and elegant structure. The flavor is dominated by stewed raspberries, dark cocoa, and brown sugar, and the whole thing tastes like a liquid fruit cake with a subtle cocoa undertone. Thanks to its balanced profile, the coffee is suitable for both espresso and filter methods, where its jammy notes and delicate acidity unfold beautifully. This is another in a series of thoughtful fermented lots that bear the hallmarks of the LaREB team and producer Ana Mustafá herself.
Ana Mustafá is a long-time partner of the roastery and the driving force behind the LaREB project, which connects quality- and experiment-focused producers in Colombia. Her five family farms are located in the Risaralda region, near the towns of Pereira and La Celia. This fertile and green region with a rich history of coffee cultivation experienced a boom in the 1960s and 1970s, which allowed many farmers, including Ana's grandfather, to invest in land. Originally a Palestinian immigrant, he started out as a textile merchant, but his passion for agriculture led his family to coffee farming. After his death, the farms were divided among the younger members of the family, and Ana now manages all five properties with her cousin.
This lot has undergone a unique fed-batch processing that enhances sweetness and complexity. On the first day of harvesting, the pulped cherries are placed in a fermentation tank, where controlled fermentation begins. On the second day, more freshly pulped cherries are added, introducing a new batch of sugar pulp that activates fermentation. Thanks to this process, the coffee ferments for only 1-2 days, but very intensely. After minimal washing, some of the mucilage remains on the beans, which influences the flavor during drying. The result is a juicy and sweet cup with flavors of stewed fruit, chocolate, and cane sugar—the ideal choice for anyone who loves bold and modern coffees.
