Monkaaba from Denmark’sLa Cabra Coffee is a coffee that will win you over from the very first whiff. In the cup, it is beautifully juicy, floral, and fruity, with bright notes of red fruit, a delicate sweetness, and a clean, elegant acidity. Thanks to its medium roast, it is suitable for both drip and espresso. In a drip brew, its floral notes, juiciness, and delicate fruitiness shine through, while in an espresso, it reveals a sweeter, more concentrated character.
Behind this coffee are small-scale farmers involved in the Monkaaba project in San Agustín, in Colombia’s Huila region. The project was founded in 2020 by Esnaider Ortega Gomez and Didier Ortega with the goal of creating a fairer, more transparent, and more open pathway between producers, exporters, and roasters. They started with a small group of six families, but by the 2025 harvest, they were already working with 80 families from the San Agustín area. Monkaaba functions as a community built on collaboration: producers can evaluate their coffees together, receive feedback, and improve quality. Several top Pink Bourbon growers contributed to this lot, resulting in a coffee with micro-lot quality but in larger volumes.
The variety is Pink Bourbon, known for its aromatics, bright fruitiness, and elegant sweetness. The coffee grew at an altitude of around 1,800 meters above sea level, which helps the cherries ripen more slowly and results in a cleaner profile in the cup. The processing method is washed, so you can look forward to a very clean, distinct, and juicy profile. It is precisely the washed processing that beautifully highlights the floral aroma, red fruit notes, and balanced acidity.
