Behind this beautifully balanced coffee is Luz Helena Salazar, a farmer from the Colombian town of Armenia in the Quindío region. On her farm La Leona, at an altitude of 1,800–2,000 meters above sea level, she grows Arabica on 8 hectares and has been in the business for over 20 years. Her journey to coffee began with the story of her husband Jair, a former drying plant manager. Today, Luz is a respected producer who combines traditional care with a modern approach. Thanks to the family project Cofinet, founded by her sons Carlos and Felipe, she has access to advanced facilities and know-how. It is there, at the La Pradera processing station, that the flavor of this coffee is carefully crafted.
The beans undergo a washed process with fruit maceration – freshly harvested cherries ferment together with fruit, giving the coffee rich fruity tones. The caffeine is then removed using ethyl acetate from sugar cane and spring water – a method that preserves the aroma and sweetness. Steam removes the silver skin from the beans, followed by an eight-hour bath, drying, and careful stabilization. The result is decaffeinated coffee that tastes more like a specialty coffee than a compromise.
