Colombia LOS VASCOS from Swedish roaster Gringo Nordic is a coffee that will captivate you with its delicate and refreshing taste with notes of lemon cream, milk chocolate, and peaches. It is a coffee that offers a complex and balanced profile with pleasant acidity and subtle sweetness. The lemon acidity harmonizes with the fruity notes of peach to give the coffee freshness, while the milk chocolate adds creaminess, making the coffee pleasantly balanced and full-bodied overall. This profile is ideal for all filter coffee preparations, where the flavor can fully develop.

The coffee comes from the Bilbao region of Tolima, grown on small family farms at altitudes of 1,500–1,850 meters above sea level. The region is known for its rich biodiversity, which is reflected in the quality of the local coffee. Farmers here grow coffee with an emphasis on sustainability and high quality. The coffee cherries are carefully hand-picked, fermented, and dried on raised beds, ensuring that the coffee has a clean, complex profile with clear flavor notes. Each family farm in the area is part of a wider community that shares the goals of improving coffee quality and supporting the local economy.

The coffee is processed using the fully washed method, which is known for its ability to preserve the purity and complexity of flavors. After harvesting, the cherries are carefully sorted, fermented for 12 to 18 hours, and then dried on raised beds for 15 to 25 days to ensure optimal quality. This process allows the coffee to develop a high-quality flavor with a delicate acidity and fruity and chocolate notes. The farmers also use organic methods, such as avoiding the use of pesticides and actively protecting the environment, which guarantees not only the quality of the coffee but also its sustainability.
