Try this exceptional geisha, which shows how important quality roasting and processing are. It comes from Colombia and has been prepared for you by the A Matter of Concrete roastery. The Geisha was processed using a double-washed method with double 24-hour anaerobic fermentation. This specific method brings subtle notes of orange, the sweetness of peach, and the lightness of flowers to the final cup. Every sip reveals the precise care taken to ensure the flavor and quality of this unique coffee.

Las Marias Estate is the newest addition to the Giraldo family of farms. Jose Giraldo was looking for a farm at a higher altitude, surrounded by native forest and with optimal light conditions that would improve the quality of exotic coffee varieties. He found what he was looking for in the town of Pijao, in the Quindio region, known for its peaceful atmosphere and natural beauty. During his search , he came across Las Marias, a farm that had been abandoned for more than 20 years and overgrown with grass and invasive plants. However, in the midst of this wild landscape, some rare coffee cultivars were still thriving. The farm had about 7, 000 Typica trees, around 70 years old but in a state of neglect. Jose and his team worked to restore these trees and began selecting the best genetic varieties to grow at Las Marias. The Geisha variety became their prized focus. They obtained seeds from Panama and carefully cultivated these delicate trees. Only the best Geisha varieties from Las Marias were harvested for this double-washed lot. The cherries were harvested at peak ripeness, with a Brix value higher than 22.

After harvesting, the cherries were transported to Café 1959 at the La Clarita drying facility . There, the coffee was de-pulped and placed in closed tanks, where the first 24-hour anaerobic fermentation took place. The tank was then opened, the coffee was washed and placed in a second closed tank, where it underwent another 24 hours of fermentation. Finally, the coffee was washed again and spread out on raised drying beds to complete the process. The entire process ends with vacuum packaging and shipping, ensuring the highest quality of this exceptional coffee.
