The coffee gets its fruitiness and light body from the washed processing method. After harvesting, the coffee cherries are immersed in water tanks, where they ferment for 72 hours. After fermentation, the coffee is dried on terraces, where it is exposed to sunlight and carefully turned to ensure even drying. The result is a coffee with a light body, pleasant acidity, and light fruity notes.
