La Cabra Coffee presents a lot from Colombia's Palestine region in Huila – washed Geisha beans from Julian Calderón and his father Julio. This coffee captivates from the very first aroma: its bouquet is distinctly floral, with the delicacy of orange blossoms. In the cup, it develops into a fresh, perfectly balanced flavor dominated by citrus notes of lime and mandarin, underscored by a deep sweetness reminiscent of honey.
Julio and Julian Calderón farm at an altitude of 1,800 meters above sea level near the town of Palestina, in an area with fertile volcanic soil that is not burdened by intensive agriculture like other parts of Colombia. This terroir gives their coffee exceptional depth and purity. Both growers share a quiet but very honest approach to coffee – they focus on high-quality varieties, precise processing, and striving to showcase the natural character of each bean. Julian sold only his second harvest this year through the LaREB collective, which also connected him with his father. Thanks to this collaboration, it was possible to process a larger harvest and offer an exceptional lot whose potential is just beginning to blossom.
Thewashed processing gives this Geisha exceptional clarity and delicacy. Careful cherry selection is followed by controlled fermentation, which highlights floral notes and citrus freshness. Drying at an altitude of 1,800 meters above sea level gives the beans stability and depth. The resulting cup is crystal clear, floral, with a subtle citrus note and a smooth texture. It is proof that world-class coffee can be produced by small but determined producers.
