This coffee represents an exceptional combination of family tradition and innovative practices that guarantee a unique taste experience. Ripe Pink Bourbon cherries are first carefully selected using flotation and manual sorting. They then undergo anaerobic fermentation in closed tanks for 96 hours at controlled temperatures of 18-20 °C, with the pressure regulated by a water valve. After fermentation, the cherries are mechanically de-pulped, leaving some of the pulp on the beans – the so-called honey process. The beans are then slowly dried in the sun for 12 days under carefully controlled conditions, which contributes to even drying and preservation of the complex sensory profile. The result is a coffee with a dense body and layered structure, harmoniously combining sweetness, acidity, and texture to create a sophisticated and rich profile with a gently rounded acidity.
