This coffee is part of the sustainable Fellows Farms project, which has been collaborating with small partner farms in the prestigious regions of Huila and Cauca since 2022. The project purchases coffee from these small-scale producers at premium prices and provides them with training in advanced agronomic practices and selective harvesting. Also of great significance is the collaboration with AMCAPEC, an association of women coffee growers in the Tambo, Piendamó, and Caldono areas of the Cauca department. Fellows Farms is thus helping to build a more transparent coffee market with direct financial benefits for the growers themselves.
To ensure absolute consistency and 100% traceability for each lot, the hand-picked cherries from the 2025 harvest are transported to the processing center at the renowned La Inmaculada farm. The coffee trees grow at an impressive altitude of 1,700–2,000 meters above sea level, which gives the beans excellent density. Upon arrival at La Inmaculada, the cherries undergo a three-step rigorous inspection process: first, separation of leaves, stones, and underripe cherries via flotation in a water bath; next, modern electronic sorting by ripeness; and finally, a final manual selection. The highest-quality, optimally ripe cherries are then destemmed, carefully washed, and subjected to a strictly controlled drying process for 15 days, until the beans reach an ideal and stable moisture content of 10.5%.
