The Colombia FINCA MILAN from the French roastery Tanat Coffee comes from the NG (New Generation) lot, which demonstrates how precisely controlled fermentation can highlight the natural character of coffee. In the cup, you’ll first be greeted by a delicate aroma of orange blossom and an elegant note of rose water, which gradually gives way to a juicy raspberry flavor. The coffee feels light and clean, with a delicate body, pronounced aroma, and a pleasantly fresh aftertaste. With an SCA score of 88 points, this coffee is for anyone who enjoys a more subtle and complex profile, where individual notes stand out clearly yet remain in harmony.
Behind this coffee is producer Julio Madrid and his farm, Finca Milan, in Colombia’s Risaralda region. Today, the farm is considered one of Colombia’s leading sites for precise coffee fermentation. It is here that individual processes—based on a detailed understanding of microbiology—are developed and refined. The Castillo and Caturra varieties are grown here, and thanks to careful processing, their full potential is realized in the cup.
For this lot, a specially prepared culture of yeast and bacteria—developed right on the farm—is used. Ripe coffee cherries are first pulped and then undergo controlled fermentation with the aforementioned yeast culture for approximately 5 to 10 days. The culture is maintained using a base made from local fruits, aromatic plants, and spices, which helps influence the fermentation process and enhance the coffee’s distinctive flavor profile. Fermentation is followed by washing and slow, controlled drying. The result is a clean and intense cup characterized by floral delicacy, fruity juiciness, and precisely defined flavors.
