The roaster who roasted this unique 100% Arabica medium-dark has focused on the best of the Colombian Tabi variety. In the cup, a play of notes of raspberry, tropical fruit and sweet cherry unfolds - resulting in a fresh, fruity, juicy flavour with a subtle but distinct acidity and beautiful depth.
The grains come from the Huila region of Colombia, specifically from the town of Acevedo, home to the famous Finca Las Flores. This farm was established in the 1990s and today covers an area with more than 90 000 coffee trees. The Ayure family has specialised in a selection of coffees since 2006, when it first participated in the Cup of Excellence competition. With the arrival of Jhoan Manuel Vergara Ayure, son of the original founders, the farm gained new impetus and has worked tirelessly to improve each harvest since. Among others, they grow Pink Bourbon, Java, Maracaturra and Tabi, a variety that is a cross between Typica, Bourbon and Timor and is known for its robustness and exceptional flavour potential.
The processing of this microlot is as precise as its cultivation. It all starts with hand-picking at ideal ripeness, controlled by Brix values, followed by disinfection of the cherries and 12 hours of fermentation in GrainPro vats. The grains are then fermented for a further 24 hours in tanks, after which they are dehulled. The key step is anaerobic fermentation with the pulp, which takes 48 hours - creating an intense and complex flavour profile. This process is interrupted by hot water, which helps to stabilise and remove unwanted bacteria. Finally, the coffee is dried in hermetically sealed stainless steel dryers until the optimum moisture content of 11% is reached. The result is a cup full of exceptional elegance, purity and fruity explosion.
