The coffee trees grow at an elevation of 1,930 meters above sea level, where the coffee has the space to ripen more slowly and develop a more pronounced aroma. “Letty” is the name given to a specific selection of Gesha from this farm, which stands out for its delicacy and aromatic purity. The El Paraiso farm is known for its attention to detail, separate lots, and highly controlled post-harvest processes, all of which are clearly reflected in the character of this coffee.
Processing is carried out using the double fermentation thermal shock method. The coffee undergoes anaerobic fermentation first as whole cherries and then after pulping. During the process, a yeast culture from the Gesha variety is used, which helps guide the fermentation in a more targeted and controlled manner. After fermentation, the coffee is sealed and washed using the thermal shock technique, which involves varying the temperature during washing. This step is intended to stabilize the aromatic precursors and enhance the clarity of the final flavor profile. The result is a distinctly aromatic coffee with a precisely defined flavor profile.
