Finca El Jaragual, located at an altitude of 1,500 meters above sea level, represents the perfect combination of a traditional approach to coffee and modern processing techniques. Finca El Jaragual was founded in 2019 when Jonny and his brother bought 60 hectares of the original 150 that belonged to their family. The farm was named after the Jaragua grass, originally from Africa, which spread in Colombia thanks to its resistance to drought. The entire Amalfi region is known for its ideal location for growing select coffee—its mountainous terrain and favorable climatic conditions ensure excellent quality. Jonny and his cousin Jorge grow seven different varieties of coffee trees here under the shade of banana trees, which minimizes any bitterness that is common in young bushes. The Rosado variety , also known as Pink Bourbon or Colombia Rosado, is one of the most interesting gems of this farm.
Rosado from El Jaragual was carefully hand-picked at the ideal stage of ripeness and then washed using a method involving controlled fermentation in anaerobic bioreactors with the addition of specific yeasts. Fermentation was further precisely controlled using thermal shocks – alternating hot and cold water. Thanks to this modern technique, the coffee has retained its unique complexity, purity, and silky texture without any unwanted alcoholic or fermented notes. Finally, organic drying completed the process with respect for sustainable agriculture.
