This coffee comes from the Huila region of Colombia, specifically from the small family farm El Rincón, located at an altitude of 1,650 meters above sea level. Its unique location in a valley where two mountains meet creates the ideal microclimate for growing specialty coffee—cool nights and warm days slow the ripening of the coffee cherries and ensure their rich and complex flavor. The soil enriched with minerals from the nearby Nevado del Huila volcano, the pure mountain spring, and the presence of a rainforest reserve create the perfect conditions for the sustainable production of exceptional coffee. Behind the entire project is Diego, a young farmer from the village of Santa María, who decided to remain true to his family roots and devote his life to coffee. Since 2013, he and his family have been growing Castillo and Colombia varieties, and in addition to farming, he also does cupping in his own café.
Kolumbia El Rincón Natural is processed using the dry method (known as natural). After harvesting, the coffee cherries are carefully selected and then dried whole on African beds, where they ferment and dry naturally in direct sunlight. This process can take several weeks, during which the beans absorb the maximum amount of sugars and aromas from the pulp. The result is a rich, fruity flavor with a distinct sweetness, full body, and a long-lasting finish. The dry processing enhances the natural complexity of the coffee and brings exceptional tropical fruit tones to the cup, which are characteristic of this farm and proof of the precise work of the entire team led by Diego.
