Diego Bermúdez, founder of the Finca El Paraíso farm in the Piendamó, Cauca region of Colombia, is behind this decaffeinated wonder. Diego and his family have been making coffee for over 13 years and were among the pioneers in the fermentation field. Today, their farm is one of the most advanced fermentation centers in Colombia, where every step of the coffee processing is carefully thought out. The coffee first goes through the sugar cane decaf method, which gently removes the caffeine using sugar cane derivatives - without chemicals, with the utmost respect for taste. This is followed by a double anaerobic fermentation with the addition of selected strains of Lactobacillus, which enhances the smoothness and sweetness of the resulting flavour. Finally comes the unique thermal shock: the coffee first goes through a hot bath (45°C), followed by a cold bath (5°C), which helps lock the aromatic substances directly into the bean. The result is a coffee without compromise that will surprise you with its fruity freshness even in the decaffeinated version.
