This naturally processed coffee from Colombia, roasted by Danish roaster Prolog Coffee, will captivate you with its incredible aroma and sweetness. The final cup is dominated by notes of sweet cherries, candy sweetness, and subtle hints of vanilla. A great choice for lovers of bold and playful profiles with a full body and long finish.

This coffee comes from the El Paraiso farm in Colombia, owned and operated by Jose Ignacio Gomez Lopez. José is known for his love of experimentation – he strives to gain a deeper understanding of the agronomy of coffee cultivation while appealing to discerning customers. As part of these efforts, he began planting the Geisha variety among the commonly grown varieties, which he likes to "play with." The farm also has a unique solar dryer designed specifically for efficient drying of coffee after processing. The dryer consists of three floors of raised drying beds located under a plastic roof that allows light to pass through while protecting the coffee beans from excessive sunlight. Thanks to the precise orientation of the structure, the dryer allows side winds to flow through, helping to stabilize the temperature and create ideal conditions for slow and even drying.

Thenatural method is often used in areas with water shortages, especially in Africa and in dry areas of Latin America, such as Brazil. In dry processing, the cherries are spread out on concrete surfaces or beds and dried in the sun or using dryers. The coffee is turned regularly to prevent mold and unwanted fermentation. Once drying is complete, the husk is mechanically removed in a dry mill. Dry processing adds characteristic flavor elements to the coffee that are independent of the variety or terroir. Properly executed drying brings fruity notes and a creamy body to the cup.
