Colombia El Diviso from Coffeein is a filter coffee that’s sure to win you over with its sweetness, juiciness, and distinctly fruity character. In the cup, you’ll find fresh fruit, tropical fruit, and floral notes. The aroma is very sweet, almost like bubblegum; the body is dense, almost jam-like; and the flavor features notes of sweet tropical and red fruits. The aftertaste lingers long after you finish your cup and retains the same sweet character.
The coffee comes from Colombia, specifically the Huila region, from the El Diviso farm. Behind this lot is Néstor Lasso, one of the most prominent figures in the world of specialty coffee today. The family-run El Diviso farm has garnered significant attention in recent years, primarily due to its experiments with fermentation and processing. Their micro-lots appear in the offerings of top roasters as well as at world barista competitions, and they perfectly demonstrate the wide range of flavors specialty coffee can offer. The coffee trees grow in the Huila region in volcanic soil at an elevation of 1,850 meters above sea level, and the cherries were hand-picked and sorted in 2025.
The variety is Ombligón, and the processing method is anaerobic natural—that is, dry processing with fermentation in the absence of oxygen. Ripe coffee cherries are processed whole, including the pulp, and during anaerobic fermentation, their intense sweetness, fruitiness, and aromatics develop. It is precisely this process that gives the coffee a jam-like body, the sweetness of tropical and red fruits, and a distinct impression of fruit-flavored gum. The result is a cup that is sweet, juicy, long-lasting, and distinctive enough to be remembered by anyone who enjoys modern, experimental coffees.
