The coffee comes from the Bruselas area in Colombia’s Huila region, specifically from the family-run El Diviso farm. José Uribe Lasso, along with his sons Néstor and Adrián, has been managing the farm—which has a history spanning more than 25 years—and in recent years, they have significantly shifted its focus toward specialty coffee. The farm is located high in the mountains, at around 1,850 meters above sea level, and the family works with varieties such as Caturra, Tabi, Pink Bourbon, Sidra, Geisha, Java, and Bourbon Ají. In addition to the diverse varieties, they also experiment extensively with processing methods—from washed to semi-washed to natural. El Diviso gained global attention in 2022, when one of its varieties won the prestigious World Barista Championship.
This coffee is processed using the anaerobic washed method. The coffee cherries are first rinsed in water to separate out lower-quality beans, then hulled, followed by a brief 12-hour anaerobic fermentation. After washing, the coffee is dried on parabolic beds for approximately 18 to 24 days until it reaches an ideal moisture content of 11%. The result is a beautifully clean and well-defined cup that blends the freshness of the washed process with the sweetness and fruitiness typical of anaerobic processing.
