This coffee comes from the Nariño region, located in the heart of the Colombian coffee belt—an area known for its rich coffee tradition and ideal conditions for growing high-quality coffee. Farmers in this region pay close attention to every step of the production process, from variety selection to harvesting, which is reflected in the unique character of this coffee. The beans come from Finca El Ajial, owned by Luis Alfredo Lopez, who together with his wife and the support of the local community, cultivates specialty coffee trees on a one-hectare plot. The farm also includes an additional two hectares dedicated to a self-sustaining ecosystem with avocados, corn, beans, peas, and cows for fresh milk.
El Ajial is processed using the washed method, which emphasizes the clarity and brightness of the flavor. This method involves removing the skin and mucilage from the coffee cherries before drying, allowing better control over fermentation and cup quality. The result is a coffee with clear fruity notes and a balanced acidity.
