Colombia Edinson Argotefrom Nowhere Future Coffee Roasters is an espresso that pushes the boundaries of traditional taste perception. In the cup , notes of pink lemonade, lychee, Turkish delight, and delicate floral hints of honeysuckle unfold, coming together to create a distinctly aromatic, sweet, yet refreshing profile. The coffee is juicy, elegant, and very layered—the acidity is lively yet pleasantly rounded, the body is on the lighter side, and the finish is long and florally sweet. It works wonderfully as a modern espresso, best enjoyed black, but it also shines in milk-based drinks.

This lot comes from the Huila region in Colombia, where Sidra coffee trees grow at an altitude of around 1,850 meters above sea level. Sidra is a variety known for its distinctive aroma and ability to bring complex floral and fruity notes to the cup. Producer Edinson Argote is among the farmers who aren’t afraid to experiment and push the boundaries of traditional processing. Thanks to a combination of suitable terroir and a precise approach, the result is a coffee with a distinct character and the producer’s strong signature.

The processing combines the washed method with yeast inoculation and thermal shock. After selective hand-picking, the cherries undergo controlled fermentation with added yeast, which helps develop specific aromatic compounds and highlight the fruitiness. The subsequent thermal shock phase stabilizes the profile and enhances the clarity of the resulting cup. After washing, the coffee is dried under controlled conditions to maintain consistent moisture levels and preserve the clarity of the flavors. The result is an espresso that combines an experimental approach with the purity of washed processing, offering a truly distinctive taste experience.
