Select Colombia DE CAŇA coffee from The Good Coffee Cartel roaster is characterized by notes of citrus, caramel and pralines.
The Good Coffee Cartel finally comes out with their new decaffeinated coffee! They have it from Cafe Imports, who are known for their well-crafted decaffeinated coffees. They call this coffee Decaf De Caňa because in Colombia they are used to processing these beans using a special natural process.
In this process, the coffee is first added to the steam, where low pressure opens the pores in the coffee beans to prepare them for decaffeination. The green coffee is then soaked in a water bath with E.A.-ethyl acetate (which, among other things, naturally comes from fermented sugar or is found, for example, in bananas). E.A. binds to the chlorogenic acid salts in the coffee, allowing the caffeine to be extracted. The coffee is removed from the bath, steamed again, this time to ensure that no traces of E.A. The final product contains almost no caffeine, it removes approx. 99%.
Cafe Imports staff have personally visited the caffeine plant several times and have been impressed with both the process and the quality of the cup!
