Fresh, pleasant acidity
As others write - too much "artificiality". I think it's because the taste and smell (mainly) of coconut is quite strong and doesn't quite (IMHO) match the flavor profile of coffee.
Recipe
Preparation method: Aeropres
Coffee (g): 14+16g?
Water (g): whole aeropress
Water temperature: 93
Grinder (settings): grind finely
Process: upside down
