Aristides Guarnizo Cruz is a first-generation farmer who, together with his family, owns a farm in the El Libano area of Tarqui. Nearly ten years ago, they inherited the pastures and decided to grow coffee, even though their neighbors doubted their success due to the rocky soil, high altitude, and strong winds. Aristides and his brothers didn’t give up and gradually began to improve their cultivation and processing methods. They focused on precise fermentation and organic practices. They produce their own compost and use microbial teas as a natural alternative to chemical fertilizers and pesticides.
This coffee is a perfect example of their approach. It has undergone anaerobic fermentation and washed processing. After harvesting, the coffee is de-pulped, then left to ferment for 12–36 hours in sealed containers, which influences its flavor profile. Finally, it is washed and dried on terraces, resulting in this wonderfully balanced coffee with pronounced acidity, syrupy sweetness, and notes of blackberries, apples, and molasses. This precise process highlights the immense flavor potential of thePink Bourbon variety, which is renowned for its high quality.
