Prolog has once again sourced beans from the Colombian community of Aponte, and the result is a cup that could easily rival a perfume – it smells and tastes so distinctive. The cup reflects not only the terroir of the high mountains of Nariña, but also the careful work and experience of people who know how to get the best out of Caturra.

Behind this coffee is not an anonymous farm, but an entire community – specifically, the Inga people of Aponte, descendants of the ancient Incas who decided to swap illegal crops for coffee. Thanks to their collaboration with Prolog, they now have a stable income and the opportunity to develop their traditional agricultural knowledge for the benefit of both quality and the landscape. At an altitude of 2,150 meters above sea level, they grow Caturra with respect for nature and attention to detail, and the result can be tasted in every sip. This community is not just a producer – it is a partner and part of the story that unfolds in every cup of espresso.

The beans undergo the honey method, which leaves some of the sweet pulp on the coffee seeds during fermentation. This creates the typical "sticky" effect that gives the coffee its intense fruity character. At Aponte, the cherries are left to ferment for 24 hours after hulling, which adds depth and complexity to the coffee while reducing water consumption compared to traditional washed processing. The resulting flavor is beautifully layered – full of sweetness, juiciness, and delicate floral notes. Coffee with soul, a story and a touch of tropical magic.
