The Bluebird roastery brings a unique lot called MIGOTI HILL from the Burundian province of Bujumbura-Rural, created in collaboration with the visionary Migoti Coffee Company project. This coffee is like a walk among fruit trees – the taste offers notes of red apple, white grapes, and raisins, which together create an elegant and balanced profile. Grown at an altitude of 1,750 meters above sea level, this Red Bourbon coffee is the perfect example of Burundi's delicate and complex production. A cup of this coffee brings sweetness, juiciness, and a pleasant clarity that every specialty coffee lover will enjoy.
This coffee is the result of the Migoti Coffee Company project , founded by Dan Bros and Pontien Ntunzwenimana, two engineers born in Burundi who decided to change the fate of the local coffee communities. After a civil war that destroyed a significant portion of the coffee plantations, recovery came in 2016, when Pontien built a modern washing station that allowed local farmers to believe in the future again. The Adopt-a-Hill project, which processes coffee separately according to hills, gives rise to exceptional microlots – and Migoti Hill has become a favorite of the Bluebird roastery.
The coffee is processed using the washed method, which is traditionally associated with cleanliness and precision in Burundi. After being picked by hand, the ripe cherries are transported to the station, where they undergo careful fermentation and subsequent washing in cold water. The coffee is then dried on raised beds, where workers regularly turn the beans to ensure even drying. This process brings lightness, juiciness, and purity of flavor to the final cup. Migoti Hill is proof that even a small community can produce world-class coffee through determination and innovation – all with a deep respect for the land, the people, and the future.
