Just as we carefully choose coffee beans, we should pay the same care to the quality of the water from which we prepare coffee. This has a very large influence on the extraction process and the resulting taste. The hardness of the water and the amount of minerals must be monitored. In cafes, it is already standard to have a reverse osmosis system connected to the water supply, which specifically filters the water, but few people buy it at home.
