Matcha Saemidori represents the very best of Japan’s Yame region—the farmers themselves consider it one of their most successful harvests. It is produced exclusively from the youngest leaves of the first harvest of the single-variety Saemidori cultivar, which is renowned for its vibrant green color, full umami profile, and absence of unpleasant bitterness.
Upon opening, it captivates with a floral aroma and a subtle nutty hint, which, when whisked, develops into deeper earthy tones and intense umami. The texture is light and airy, the body smooth and harmoniously rounded, with minimal astringency or acidity. The clean flavor combines herbal notes with nuances of bamboo and wood, which transition into a pleasant sweetness on the finish. Recommended preparation:
Sift 2 g of matcha into a bowl and pour 50 ml of water at a maximum temperature of 80 °C over it. Using a bamboo whisk (chasen), whisk until smooth and frothy. If preparing a latte, top the whisked matcha with warm or cold milk or your favorite plant-based beverage.
