KINU Matcha from MICHI Tea is a great choice for anyone who wants to incorporate matcha into their daily routine. This finely ground green tea can be prepared traditionally with just water, but it also works just as well as a base for a matcha latte or a refreshing cold drink. Because it comes in powder form, the tea leaves aren’t steeped during preparation; instead, they’re stirred directly into the water and consumed whole.
Matcha is made from tea leaves intended for the production of tencha. Before harvest, the tea plants are shaded, which limits exposure to sunlight and alters the composition and resulting flavor of the leaves. After harvest, the leaves are steamed, dried, and stripped of their stems and veins. The resulting tencha is then ground into a very fine green powder, which we know as matcha.
For traditional preparation, start with about 2 g of matcha, which you first sift into a bowl. Add about 60 to 70 ml of water at a temperature of around 80 °C and whisk with a bamboo chasen whisk until smooth with a fine foam. You can then adjust the amount of water depending on whether you prefer a more concentrated or a lighter cup. KINU is packaged in 30-gram portions.
