We can offer you this iced coffee drink from Burundi again this summer. The Gahahe washing station is located in the town of Gahahe in the Kayanza region. Cherries are processed wet under constant supervision. Pulping, fermentation time, washing, sorting into kernels and final soaking are carefully monitored. The cherries are then peeled within six hours of delivery. The coffee is dry-fermented for up to 12 hours and then soaked in pure mountain water for 12 to 24 hours. The parchment is then soaked for another 12 to 18 hours before being transferred to drying beds. Parchment takes approximately 2 to 3 weeks to dry.
