Just as juicy, sweet, sour as a ripe cherry, with a hint of molasses
A very intense aftertaste, like a more intense caramel
When it cools, the flavors change to dark chocolate / nuts
Perhaps the most interesting tasting coffee I've had recently
Recipe
Aeropress (I use it for almost everything)
Coarse espresso grind, 10g of coffee, Use 2 filters (do not wash) for preparation using the standard method. Prepare the water to 95°C, pour 60g of water and swirl a few times as in Chemex/V60 for bloom, turn on the timer and leave for half a minute. At 0:30 add another 130g of water for 10 seconds. Place the plunger lightly, remove it from the scale, swirl it a few times again (try not to touch the plunger, even with a gentle touch, a lot will flow out). At 2:15 (up to 2:30) start pushing slowly so that at 2:45 (up to 3:00) a cup of coffee is born.
Finally, I recommend mixing with a spoon so that all the phases that have flowed into the mug during the preparation are combined :) Enjoy!
