This Colombian coffee from the Irish roaster 3FE features bright fruitiness, a juicy character, and a beautifully clean finish. The flavor profile combines raspberries, peaches, and honey, giving the cup a fresh and sweet character. The acidity is pronounced but well-balanced, and it’s the raspberry note that gives it a pleasant roundness and a sweeter finish. It’s a coffee that has energy and brightness, yet remains very approachable and easy to drink. It’s exactly the kind of pour-over that delights from the first sip and reveals even more fruity sweetness as it cools.

The coffee comes from the Los Chorros farm in Colombia’s Huila region and is produced by Efren Albeiro Erazo and Carmen Elisa Sanjuan. The farm covers just one hectare, so production is truly small-scale, allowing for meticulous attention to every step from harvest to processing. The Caturra coffee trees grow at an elevation of 1,706 meters, where conditions are ideal for slower ripening and the development of sweetness as well as a more complex acidity. Los Chorros has appeared repeatedly in 3fe’s lineup, and it is precisely its clean, juicy, and slightly jam-like profile that keeps this lot among their favorite Colombian coffees.

The coffee is processed using the washed method, which in this lot primarily enhances its clarity, distinct structure, and pronounced fruity notes. After harvest, the skin and pulp are removed from the cherries; the beans are then washed and dried to a stable moisture content. Thanks to this process, notes of raspberries, peaches, and honey come through very clearly in the cup. The result is a clean, juicy, and balanced Colombian coffee with lively acidity and a long, sweet, fruity finish.
