The coffee comes from the Los Chorros farm in Colombia’s Huila region and is produced by Efren Albeiro Erazo and Carmen Elisa Sanjuan. The Caturra coffee trees grow at an elevation of 1,706 meters, where conditions are ideal for slower ripening and the development of sweetness and more complex acidity. The coffee is processed using the washed method, which in this lot primarily enhances its clarity, distinct structure, and pronounced fruity notes. After harvest, the skin and pulp are removed from the cherries; the beans are then washed and dried to a stable moisture content.
