You can adjust the profile depending on which part you like better - fruity or chocolate/cocoa.
It is necessary to let it lie for at least 3 weeks-month
It requires a temperature below 90. I always had to check with a thermometer to make sure it didn't taste bitter.
A lot of coffees didn't taste that good/rather disappointed before I found my sweet-spot.
