There are coffees you simply taste, and then there are those that stay with you. Indonesia Frinsa Manis from the Paris-based roastery People Possession falls squarely into the latter category. From the very first whiff, it releases intense aromas of guava, pink grapefruit, and white grapes, which blend on the palate with a subtly fermented hint of rice wine. The cup is juicy, exotic, and unexpectedly complex, while retaining an elegance and clarity that compels you to return for more sips.
Behind this flavor adventure lies the Frinsa Estate in the West Java region, run by Wildan Mustofa and his wife Atieq. Since 2010, they have been building a project that goes against local customs and, instead of traditional wet hulling, focuses on experimental and precise processing methods. The farm is located at an altitude of around 1,400 meters, and thanks to a combination of the region’s stable climate, mineral-rich volcanic soil, meticulous work, and strict oversight of every step from harvest to final sorting, they produce coffees that redefine what Java is all about. Frinsa also actively collaborates with neighboring farmers, sharing know-how and elevating the quality of the entire region.
Dry processing, specificallyextended natural fermentation for 96 hours, gives this coffee its unmistakable character. After careful harvesting, the whole cherries are fermented in a controlled environment, where complex sugars and aromatic compounds gradually develop. Subsequent drying takes place slowly to maintain a balance between sweetness, fruitiness, and subtle fermentation. The result is a fuller body, pronounced juiciness, and a layered flavor profile reminiscent of exotic fruits with a slight wine-like note.
