The name of this coffee refers to the Arsosala washing station that was established in 2016 in the southeastern part of Ethiopia, in the town of Uraga. It is here that more than 1,200 smallholders who have only relatively recently started growing coffee in the area deliver their cherries , which of course means one thing: young coffee trees, healthy yields and a high quality harvest. The washing station motivates farmers to harvest quality cherries at a higher farmgate price, which is 5-10% above the market. This helps to maintain the high standard of each lot.
The coffee is processed using the washed method, which in this part of Ethiopia allows the typical floral and citrus notes to stand out. The cherries are sorted after delivery, mechanically de-skinned and fermented in water tanks. This is followed by a thorough washing and drying on raised beds, where the coffee is carefully turned over to dry evenly.
